Ingredients:
• 2 pounds beef chuck, cut into 1-inch cubes
• 1 tablespoon all-purpose flour
• Salt and freshly ground black pepper
• 3 tablespoons olive oil
• 1 large onion, chopped
• 2 cloves garlic, minced
• 2 tablespoons tomato paste
• 1 cup red wine
• 4 cups beef broth
• 2 bay leaves
• 1 teaspoon dried thyme
• 2 carrots, peeled and cut into 1-inch chunks
• 2 celery stalks, cut into 1-inch pieces
• 2 potatoes, peeled and cut into 1-inch cubes
• 1 cup frozen peas

Instructions:
• Preheat the oven to 325°F (160°C).
• Pat the beef cubes dry with paper towels and season with salt and pepper. Toss the beef with flour to coat evenly.
• Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef in batches and sear until browned on all sides, about 5 minutes per batch. Transfer the browned beef to a plate.
• Reduce the heat to medium, add the onion to the pot, and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
• Stir in the tomato paste and cook for 1 minute, then add the red wine and scrape up any browned bits from the bottom of the pot.
• Return the beef to the pot and add the beef broth, bay leaves, thyme, carrots, and celery. Bring to a simmer, then cover the pot and transfer it to the preheated oven.
• Cook for 1 hour, then add the potatoes and continue cooking for another 45 minutes to 1 hour, or until the beef and vegetables are tender.
• During the last 10 minutes of cooking, add the frozen peas to the stew.
• Remove the bay leaves and adjust seasoning with salt and pepper to taste.
• Serve the beef stew hot with crusty bread or mashed potatoes. Enjoy!
