Islanders vouch for the quality ingredients and delicious ready meals served at one of Bahrain’s most popular hypermarkets. We got its talented chef to share one of his signature recipes.

Chef Suresh V Nair was born and raised in Kerela India where his passion for culinary arts was ignited by seeing a variety of different spices and ingredients readily available. He is currently stationed in Bahrain as the regional chef at Lulu Hypermarket, where he oversees the production of a large selection of multi-cuisine delicacies everyday across all locations at the popular hypermarket chain.

He finds himself spoilt for choice with the variety of great produce available at Lulu, which sources premium ingredients from around the world.

Chef Suresh specialises in Chinese, continental and Indian cuisines and a variety of salads. He has also introduced a line of fresh juices and smoothies that can be purchased from the supermarkets. The hypermarket chain’s latest offering is a new store in Juffair Mall, a sprawling space filled with farm fresh ingredients, top quality products from around the world, electronics, fashion and freshly cooked comfort food by chef Suresh.
Here is one his signature recipes.

Ingredients:
2kg salmon cut into four fillets
1tbsp olive oil
1tsp salt
1tsp ground coriander
1tsp ground cumin
1tsp paprika powder
1tsp onion powder
1tsp black pepper
1tsp dry oregano
1tsp turmeric powder
1tsp lemon juice

For Avocado Salsa:
1 avocado, peeled, seeded and sliced
1 small red onion, sliced
3 mild-hot peppers, seeded and diced
Juice of 2 limes
3tbsp olive oil
2tbsp finely chopped cilantro
Salt to taste

Method:
1. Mix the salt, coriander, cumin, paprika, onion powder, oregano, turmeric powder, lemon juice and black pepper together. Rub the salmon fillets with olive oil and the seasoning mix and keep aside for at least 30min.
2. Pre-heat the grill.
3. For the salsa, combine avocado, onion, cilantro, hot peppers, lime juice, olive oil and salt in a bowl and mix well. Chill until ready to use.
4. Grill the salmon as desired. Serve the grilled fillet topped with the avocado salsa, along with steamed rice and roasted potato.
