Ingredients

  • ½ garlic clove, minced
  • ½ jalapeño or serrano pepper, thinly sliced (optional)
  • 1 heaped cup diced cucumber
  • ¼ cup red onions, thinly sliced
  • ? cup crumbled feta cheese
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp lime juice
  • ? cup torn mint or basil leaves
  • 5 cups cubed watermelon
  • 2 cups of assorted tomatoes, sliced
  • Sea salt to taste

Preparation:

  • In a mixing bowl, whisk together the olive oil, lime juice, garlic and salt to make the dressing.
  • Arrange the watermelon, cucumber, and red onions in a bowl.
  • Drizzle half of the dressing.
  • Top with the feta, tomato, mint and jalapeño or serrano pepper, as desired.
  • Drizzle with the remaining dressing and mix well.
  • Season with salt to taste and serve.
